S’mores Ice Cream will bring back memories of sitting by a campfire roasting marshmallows and making S’mores…
2 cups Whole Milk
1 1/2 cups Heavy Cream
1 1/2 cups Sugar
Pinch of Kosher Salt
1 teaspoon Vanilla Bean Paste
1/2 cup Mini Marshmallows
6 large Graham Crackers, crumbled
1 large Hershey Chocolate bar, broken into small chunks
Mix together milk, cream, sugar, salt and vanilla bean paste. Pour into the insert of ice cream maker and make according to ice cream maker instructions.
In the meantime, place marshmallows on a baking sheet and broil for about 3 minutes, taking care not to burn. Remove from oven and allow to cool. (It helps to leave them on the countertop on the baking sheet for a couple of hours before broiling. This will dry them out and they will hold up better in the broiler. You can also, cut them up into smaller pieces, but adjust your broiling time so they don’t melt or burn.)
Once ice cream is almost ready, add crumbled graham crackers, marshmallows and chocolate pieces. Continue making ice cream until it’s thick. Place in an airtight container and place in freezer for 3 hours or overnight to harden ice cream.
